Simple Banana Salad

Banana Salad

Banana salad is a sweet, creamy American fruit “salad” (really a dessert) made with sliced bananas, pineapple, marshmallows, and a tangy dressing — perfect as a light dessert, brunch side, or potluck dish year-round.

Prep time: 10 minutes
Chill time: 1–2 hours
Serves: 6–8

Ingredients

  • 6 ripe but firm bananas
  • 1 can (20 oz / 567 g) crushed pineapple or tidbits, well drained
  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut (optional)
  • 1 cup chopped pecans or walnuts
  • 1 cup sour cream or Greek yogurt
  • ½ cup mayonnaise
  • ¼ cup sugar (or to taste)
  • 1 tsp vanilla extract
  • Optional: maraschino cherries, grapes, or a small box of dry instant vanilla pudding mix

Instructions

  1. In a large bowl, whisk together sour cream, mayonnaise, sugar, and vanilla until smooth. (Add dry pudding mix here if using.)
  2. Fold in the drained pineapple, marshmallows, coconut, and nuts.
  3. Peel and slice the bananas; immediately fold them into the dressing so they don’t brown.
  4. Cover and chill for 1–2 hours (or overnight) to let the flavors blend.
  5. Give it a gentle stir and serve cold.

Best eaten within 24 hours. Enjoy!
