Banana Salad
Banana salad is a sweet, creamy American fruit “salad” (really a dessert) made with sliced bananas, pineapple, marshmallows, and a tangy dressing — perfect as a light dessert, brunch side, or potluck dish year-round.

Ingredients
- 6 ripe but firm bananas
- 1 can (20 oz / 567 g) crushed pineapple or tidbits, well drained
- 2 cups mini marshmallows
- 1 cup sweetened shredded coconut (optional)
- 1 cup chopped pecans or walnuts
- 1 cup sour cream or Greek yogurt
- ½ cup mayonnaise
- ¼ cup sugar (or to taste)
- 1 tsp vanilla extract
- Optional: maraschino cherries, grapes, or a small box of dry instant vanilla pudding mix
Instructions
- In a large bowl, whisk together sour cream, mayonnaise, sugar, and vanilla until smooth. (Add dry pudding mix here if using.)
- Fold in the drained pineapple, marshmallows, coconut, and nuts.
- Peel and slice the bananas; immediately fold them into the dressing so they don’t brown.
- Cover and chill for 1–2 hours (or overnight) to let the flavors blend.
- Give it a gentle stir and serve cold.
Best eaten within 24 hours. Enjoy!
